Yes, Saché did protect Padmé in that way, and allowed her to keep the idealistic view Saché can never have again. She meant well, but I can't help but think she didn't really do Padmé any favors. If Padmé is to be a ruler, and a real ruler, instead of a figurehead, she needs to understand reality, and the truth of the world she rules.

Though I suspect that, even had Saché told her, Padmé might not have changed her worldview. After all, she insisted on believing the good in people, people she wanted to see good in, even after those people had, say, killed small children in cold blood.
